Rustic stuffed rooster in red sauce
Ingredients
- 1 middle sized rooster
- 1 slice of local cheese (we use the Zakynthian oiled cheese)
- 5 cloves of garlic
- 1 slice of black bread
- Livers
- Belly of rooster
- Salt, peper, oregano
Directions
In a medium pan put some oil and then add the liver and the rooster's belly, both cut in small pieces. After cooking for 10 minutes, add the minced garlic and continue the cooking for 5 more minutes. Switch off and add the cheese, oregano, salt, pepper and the bread after you rub it. Fill the rooster with the mixture you have just made and put some olive oil in a saucepan. After the oil has warmed up, put the rooster in it and keep turning it from one side to the other in order to get a uniform color. Then add a glass of wine and after 4 minutes add 2 tablespoons of tomato sauce and 4 chopped ripe tomatoes. Finally add 4 cups of water and let it boil for 40 minutes.
